Sunday Stuff

Sunday, April 22nd, 2007

I was so exhausted yesterday that I managed to unpack my suitcases and my supplies and get some laundry done and then I crashed. I spent the afternoon sprawled on the sofa watching The Learning Channel. I went to bed early and arose feeling myself again.

We went to the 8 am service at the Cathedral today because the Presiding Bishop, Katherine Jefferts Schori, was here. We knew the later service would be mobbed and no place to park. She is an inspiring preacher and a wonderful person. We had the requisite protesters outside the church, against abortion, gay rights, etc. I am so proud to be part of a church that has elected a woman to lead the church.

So, we were home by 10ish. I read the paper and walked the dog. Then I made a shopping list for the family dinner. Whoops, I got to the store and no list so I had to rely on my memory – dangerous!

I made steamed artichokes, Japanese rice bowls with seasoned turkey, veggies and hard cooked eggs with lots of ginger, garlic and Tamari sauce. I also made lemon pudding cakes. Can I just say that I love my new island table – so much workspace for cooking family meals!

Here are some pictures for your enjoyment. Miles said that the pudding cake was the “best dessert ever”! Here they are before and after baking:

Birthday Wrap-up

Saturday, March 31st, 2007

Here is a birthday card I whipped up for Steph. Mia liked it because it was “all silk.”

Stephanie loves coconut and chocolate. I found this recipe for a very decadent Deep Dark Chocolate Coconut Cake. First, you make a roll of coconut mixed with sweetened condensed milk and an egg white and put it in the fridge to chill.

The batter has two types of chocolate.

After the batter is in the bundt pan, the coconut roll is made in to a circle and placed in the batter and buried.

After it bakes and is cooled, a chocolate glaze is poured over.

This is what it looks like when you cut it — a tunnel of coconut – yum!

And this is what my grandchildren looked like at the end of spring break. I think their Mom is ready to have them back in school!

This afternoon, I was not feeling well, so I sprawled on the sofa and watched Marie Antoinette – what a visual feast! I also took a couple of Aleve and I feel better. I think I have one of those achy viruses. Hope you are having a great week-end.

Birthday Cake Activity

Thursday, March 30th, 2006

This morning M & M came over to help me make their Mom’s favorite cake. For those who wanted the recipe, here goes:

1 cup shredded coconut
1 cup unsalted butter, softened
1/2 cup shortening
3 cups sugar
6 eggs, room temperature
1 tsp. vanilla extract
2 tsp. coconut extract
3 cups flour
1/2 tsp. salt
1 tsp. baking powder
1 cup milk

Toast coconut in 300?Ǭ? oven for 20 – 30 minutes. It should look like this:

In a large bowl cream butter, shortening and sugar. Add eggs one at a time. Stir in extracts. Here is pretty picture of the batter:

In a separate bowl, sift flour, salt and baking powder together.Add to batter alternately with the milk. It is best if you have helpers do this:

Miles is amused by his reflection in the bowl.

Pour batter into a well-greased, floured bundt pan. Bake at 350?Ǭ? fir 1 hour and 20 minutes or until done. Cool on a rack for 30 minutes before removing from pan. Cool completely before slicing. Serve with a scoop of high quality vanilla ice cream and fudge sauce.

While the cake baked and cooled, M & M made cards for their mom and birds with party hats for decorations:

The birds were hung on the new chandelier:
